Masala Quinoa Khichdi
Wholesome Comfort with a Chutki of Spice
Ingredients
1.
1 cup quinoa (washed and drained)
2.
1/2 cup chopped mixed vegetables (carrots, beans, peas)
3.
1 small onion (chopped)
4.
1 tomato (chopped)
5.
1 green chilli (slit)
6.
1 tsp ginger-garlic paste
7.
1/2 tsp turmeric powder
8.
1/4 tsp mustard seeds
9.
1/4 tsp cumin seeds
10.
1 chutki Pindi Sabzi Masala
11.
1 tbsp oil or ghee
12.
Salt to taste

2 cups water
Method
1.
Heat oil in a pressure cooker. Add mustard seeds and cumin seeds. Let them splutter.

Add chopped onions and sauté until translucent. Mix in ginger-garlic paste and green chilli.
3.
Add tomatoes and cook until soft. Toss in the mixed vegetables and cook for 2 minutes.
4.
Add quinoa, turmeric powder, salt, and Pindi Sabzi Masala. Mix well.
5.
Pour in 2 cups of water. Close the lid and cook for 2 whistles.
6.
Let the pressure release naturally. Fluff with a fork and serve hot with curd or pickle.
